If you’re in a rush and need a quick, easy meal in half an hour look no further. It feeds 10-12 people, costs about £7 to make and works out at approximately 60 pence per person.
Ingredients:
10 sausages
700g pasta
1 tin of tomatoes
Salt and Pepper
1 onion
2 cloves garlic
Basil
1 tbsp olive oil
Method:
While oil is heating, finely chop the garlic and onion. Add to heated oil.
While onions and garlic are softening slice up the sausages into chunks. Add to pan and cook through.
After about 15 minutes the sausages should be cooked. Put pasta on to boil. In the meantime, add tomatoes, salt, pepper and basil to the sausages. Stir, turn down heat and simmer while pasta cooks. (I also tend to throw in any odds and ends of veg I might have tucked away in the freezer to pad it out).
Once pasta is ready drain and return to pan. Add the sausage and tomato mixture and mix together thoroughly.
Serve.
