Who said fast food needs to be unhealthy? Here is a mouthwatering meal that only takes 20 minutes to put together. The sauce can also be eaten alone with crusty bread and a glass of wine. Delicious!

This recipe makes 10-12 servings so you might need to halve quantities if you aren’t feeding as many as we do!

 

Ingredients:

350g cooked mussels

180g anchovies

20 black olives (pitted and chopped)

1 large onion

2 cloves garlic

¼ tsp chilli powder

250g passata

400g tin chopped tomatoes

4tbsp olive oil

700g petit pois

1½kg linguine

Salt and pepper

 

Method:

Heat the olive oil in a large saute pan.

Add the chopped onions and garlic and heat until softened.

Roughly chop the anchovies into large pieces and add to the pan along with the cooked mussels.

Cook with the onions and garlic for 4-5 minutes, stirring occasionally.

Add the chopped olives and continue to cook for another minute or two.

Add the linguine to a separate pan of boiling, salted water. Meanwhile add the tomatoes and passata to the mussels and anchovies. Add the petit pois (boil them until firm if using frozen), chilli powder, salt and pepper, then cover and simmer until the linguine is cooked (about 10-12 minutes).

Once the linguine is cooked to al dente drain and return to pan, drizzling with a little oil and tossing to coat.

Finally, add the sauce mixture to the linguine and toss thoroughly until all combined.

Serve and enjoy!
