Truffles

I expressed concern on the Larger Family Life Facebook group last week at how much the photograph resembled something much less appetising than the delicious truffles they actually are.   Please consider this a disclaimer that the photograph is not rabbit droppings and that this truffle recipe is fabulously tasty and very moreish for chocolate lovers everywhere.

Chocolate Truffle Recipe

Ingredients:

250g butter

300g plain chocolate

100g crushed digestive biscuits

100g mixed fruit

1tsp vanilla extract or rum depending on preference

1 egg yolk (do be careful when using raw eggs in recipes which do not require cooking)

Cocoa powder for rolling

Method:

Melt the chocolate and butter together in a bain marie.

When fully melted add the vanilla extract or rum and stir in well.

Add the egg yolk, crushed digestives and mixed fruit and mix together well.

Allow to cool in the fridge for an hour then remove and roll into balls.

Coat each ball in flour.

Serve or keep refrigerated and watch small people go back and forth to fridge pinching one at a time whilst simultaneously and very innocently claiming they haven’t taken anything at all!)
