Decadent Chocolate Mousse with Dulce de Leche and Meringue Pieces

 

 

 

 

This is a truly luxurious dessert for when you aren’t counting calories and fancy something a little special but be warned, you’ll need a very sweet tooth. The perfect grown-up dessert for dinner parties, you can make it ahead of time and leave it to set during the day until it is time to serve.

 

Ingredients:

(Makes six large servings or eight smaller ones)

 

400g milk chocolate

300ml double cream

3 medium egg whites

80g sugar

1 x 400g tin Dulce de Leche

2 meringues, broken into pieces

Chocolate shavings to decorate

 

 

Method:

If you haven’t done so already, prepare a tin of Dulce de Leche and allow to cool.

Break the chocolate into pieces and melt over a bain marie.

Whisk the egg whites and sugar together until firm.

Add the egg white and sugar mixture to the melted chocolate…

Fold into melted chocolate using a large metal spoon.

Whisk the cream and once again fold into the chocolate mixture.

Spoon into glasses and chill for 1 hour.

Once chilled spoon on a layer of dulce de leche.

Top with broken meringue pieces and decorate with chocolate shavings.

Chill until time to serve.
