Smarties Chocolate Cookies
Makes 2 dozen biscuits
Ingredients:
6oz butter, room temperature
12 oz packed dark brown sugar
2 eggs
18 oz plain flour
1 tsp bicarbonate of soda
1 tsp salt
2 tsp pure vanilla extract
2 tbsp water
16 oz Smarties or M&M’s
6 oz cocoa powder
Method:
1. Preheat oven to 375ºF or 190ºC. Grease a baking sheet.
2. In a large bowl, cream butter and sugar until smooth. Beat in the eggs until well
blended. In a separate bowl, sift together the flour, bicarbonate of soda and salt. Stir the dry ingredients into the butter mixture, mixing well. Add the vanilla and water. Stir in the Smarties or M&M’s.
3. Drop the mixture a tablespoon at a time onto the baking sheet, leaving 2” space between the cookies.
4. Bake 10 minutes, until the edges are light brown and tops golden. Remove cookies onto a rack to cool. Cool on foil for a softer cookie.
