I love recipes that are quick, easy and can be put together in minutes. I love them even more if they look like you’ve spent a great deal more time on them than you actually have. And when they taste as great as this Mediterranean Puff Pastry Tart it’s one you just have to share.
This Mediterranean Puff Pastry Tart is a fabulous recipe for eating straight from the oven or serving up cold too. Ideal for picnics, parties and BBQ’s.
Mediterranean Puff Pastry Tart
(makes one tray measuring approximately 16″ x 12″)
Ingredients:
500g Puff Pastry
500g Mozzarella Cheese
3 tomatoes
Basil
Olives
Salt and Pepper
Method:
Grease baking tray measuring approximately 16″ x 12″.
Preheat oven to 180ºC/350ºF/Gas Mark 4.
Roll out pastry to fit tray. Score pastry about half an inch in from the sides.
Slice the mozzarella cheese and scatter all over the pastry making sure you keep within the scored edges.
Thinly slice the tomatoes and layer in rows over the mozzarella.
Scatter the olives and basil on top. Season with salt and pepper.
Bake for 25 minutes.
Serve warm or cold.
