Bread Pudding

 

 

This cake is beautifully soft and moist in the middle and just so… yum!  Be warned though, because it’s very, very moreish!

 

Ingredients:

1 large loaf of bread
8oz softened butter or margarine
12oz brown sugar
4oz mixed fruit
1 tbsp cinnamon
1 tbsp nutmeg
1 tbsp mixed spice

Method:

Soak bread to soften then drain for 2-4 hours. (We’ve left it to drain overnight with no ill effects).

Put moist bread in a large mixing bowl.  Add all other ingredients and stir well until it becomes a mushy, smushy mixture.

Pour into greased baking tray.

Bake at Gas Mark 3/170ºC for 2 hours.  You may need to cover with foil halfway through baking so that the top doesn’t burn while the inside cooks.

Remove from oven and allow to cool.  Don’t worry if it looks too smooshy still, as it cools it will become more solid.

I advise you to practise self control if you are on a diet.  This cake will not help.

But it’s just so yum.

Surely one teeny, tiny…

    I just might have to try it, but I think I'll have to eat just a tad more than a bite.
    Looks to good to…waist.
