Parmesan Grilled Mediterranean Vegetables




This is a quick, easy and nutritious accompaniment to main meals or a simple, tasty lunch. Either way, it’s delicious and healthy.


Serves 4



1 courgette

1 aubergine

Olive oil to coat

Salt and pepper

A handful of grated parmesan



Wash and dry the courgette and aubergine then thinly slice.

Place into a large bowl and drizzle with olive oil, then season with salt and pepper. Use your hands to toss and coat the vegetables in the oil.

Place in a single layer under a hot grill. When the first side has been grilled turn and sprinkle the second side with parmesan before continuing to grill.

Serve. (This serves up nicely with tzatziki and hummus).
