This is quick, cheap and easy recipe to throw together making it an ideal meal for when time is short, money is tight or talent is limited!
2-3 large carrots
3 garlic cloves
3-4 tablespoons olive oil
Bring a large pan of salted water to the boil and put the tagliatelle in to cook.
While waiting for the pasta, heat up the olive oil in a separate pan. Finely chop the garlic cloves and add to pan.
Meanwhile, take a vegetable peeler and run along the courgettes and carrots to create long ‘ribbons’.
Add the ribbons to the olive oil and garlic and allow to cook gently for five minutes until softened.
The tagliatelle should now be cooked. Drain pasta and put back into a large pan. Add the vegetables and oil to the pasta and toss until mixed together.
Serve and enjoy!
