Sun-dried tomato and feta parcels

 

This is three-ingredient recipe that is equally delicious hot from the oven or cooled.

It’s yet another great dish you can throw together in minutes, ideal for meals, picnics or lunch boxes.

 

Makes 16

Ingredients:

500g Jus Rol Puff Pastry (you can find more of their products on their site at www.jusrol.co.uk)

200g sun-dried tomatoes in olive oil

200g feta cheese

 

Method:

Preheat oven to 180°C/350°F/Gas Mark 4.

Roll out the Jus Rol puff pastry into a rectangle approximately half a centimetre thick.

Divide into sixteen squares.

In a bowl, break up the feta cheese. Chop up the sun-dried tomatoes and mix them in thoroughly with the feta.

Divide the mixture into the centre of each pastry square.

Fold up each corner into the middle, pressing down in the centre. Don’t worry about gaps at the corners. As the parcels bake the corners will puff up and unfold.

Bake in the oven for approximately 10-15 minutes.

Serve warm or cold.
